Parmesan Dijon Crusted Chicken Recipe - With Wilted Spinach and Jasmine Rice

Crust Recipe:

1 tbsp extra virgin olive oil
salt and pepper, to taste
1 tbsp grated parmesan cheese
3 tbsp almond meal
3 tbsp italian breadcrumbs
1 tbsp stone ground mustard
1 tbsp lime juice
3 shakes onion powder
3 shakes garlic powder
3 shakes red pepper flakes
3 shakes chili powder

The chicken was cooked on the stove on a skillet pan and the crust was put on top of the chicken afterwards. Cook the chicken until you no longer see pink on the inside.

The rice was a cup of jasmine rice with 1.5 cups of chicken stock, 1 tablespoon of lime juice, and 1 clove of garlic and cooked for about 20 minutes (mostly simmering). Be sure to follow the directions on the bag of rice in order to properly cook it though!

The spinach was wilted with a clove of garlic, 1/2 cup of chicken stock, and 1 tablespoon of lime juice.
