Broccoli Cheese Soup Recipe

1 pack frozen broccoli
2 cups chicken broth 
1 cup yellow cheese of choice (I chose taco cheese)
1/4 cup diced yellow onion
1 roma tomato
1 tbsp minced garlic 
3 tbsp butter 
3 tbsp all purpose flour  
1 cup 2% milk 
1/2 tsp of: seasoned salt, pepper, taco seasoning, crushed red pepper flakes, parsley (for garnish)

Thaw frozen broccoli. Place all ingredients except garnish into a blender and blend until clumps are gone. Pour into a pot and heat on 3-4 until hot. Add garnish and enjoy!

Kale and Northern Bean Soup

8 tsp Better Than Bullion Veggie Broth 
8 cups Water 
2 cans Northern Beans

1/4 cup of the following veggies: 
Kale
Chopped Fennel
Carrots

1/4 tsp of the following spices:
Salt
Pepper 
Italian Seasoning
Onion Powder 
Freeze Dried Chives

Put beans, veggies, and water in a large pot. Add spices. Cook until carrots and fennel are semi soft and enjoy the tastiness!

Healthy Clam Chowder Recipe

This is what happens when your boyfriend tells you he wants some clam chowder from a can on the day of the Super Bowl... so I ended up inventing this and here it is below. Enjoy!



Servings: about 12; cooking/prep time combined: about 2 hours

Soup Base

4 cans Progresso Light New England Clam Chowder Soup
1 can Reduced Sodium Chicken Broth
3 tbsp Corn Starch (add more or less for desired thickness)

Spices

2 Bay Leaves
¼ tsp Celery Salt
¼ tsp Celery Seed
½ tsp Onion Powder
½ tsp Paprika
1 tsp Cumin
2 tsp Garlic Powder
3 tbsp Minced Onions
1 tbsp Red Pepper Flakes
1 tsp Chives
1 tsp Italian Seasoning
2 tsp Parsley
2 tbsp Thyme
Salt/Pepper to Taste

Sauces

1 tsp Tabasco Sauce
1 tsp Reduced Sodium Soy Sauce
3 tbsp Worcestershire Sauce
1 8oz bottle Clam Juice
1 tbsp Olive Oil
1.5 cups Red Sherry Cooking Wine

Veggies and Add-Ins

3 cans Clams, undrained
3 tbsp Bacon Bits
1 large Yukon Gold Potato, peeled and cubed
¼ cup diced Tomatoes
3 Celery Ribs, chopped
3 Green Onions, chopped
½ cup mixed Red and White Onions, chopped
1 Orange Pepper, chopped
¼ cup Mushrooms, chopped
2 Garlic Cloves, chopped


After prepping the veggies, place all ingredients except for the corn starch into a large, uncovered pot. Turn the stove onto medium-high heat (about “7”) until the soup comes to a boil. Once the soup boils, turn onto low heat (about “3”). Begin gradually adding the corn starch while stirring until desired thickness is reached. Make sure the veggies have the desired tenderness and the clams aren’t too tough. Top with a handful of oyster crackers in each serving if desired and enjoy!

Healthy French Onion Noodle Soup Recipe

1/3 box angel hair pasta
2 tsp Better then Bullion beef flavor
16oz water (I just filled a 2 cup measuring cup all the way to make sure it's not too salty)
5 tbsp minced onions
1/4 cup chopped red onions
1 tsp chopped fresh jalapeƱo
1 clove chopped garlic (I picked a clove that was a bit bigger because I like garlic a lot)
1/2 cup spinach
1/2 cup kale
1/4 tsp mustard powder
1 tsp chives
1 tsp parsley
2 tbsp hot sauce (Tabasco or Frank's red hot sauce floats my boat)
1 tsp Worcestershire sauce
1/4 tsp fish sauce (optional)
Cook noodles separately until al dente. Combine all other ingredients into a large pot and cook until liquid starts to boil. Serves about 4. Enjoy!

Miso Soup Recipe

1/3 cup dashi miso paste (I usually go to an Asian food mart to get this)
4 cups water
3 chopped green onions (or ¼ cup chopped red onion if you run out of green onions or don’t like them)
3 large (the “big squares”) nori sheets (or 2 small packages of nori sheets)
1 cup firm tofu, cut into about ¼ inch cubes and patted to dry with a paper towel
1 tsp soy sauce
¼ tsp garlic powder
¼ tsp ground ginger
1 cup fresh spinach
Salt/pepper to taste

Directions
Add all ingredients into a medium saucepan and simmer for about 10 minutes or until done (right before it starts to boil). Make sure the miso has dissolved and isn’t lumpy. Prep time is about 10 minutes and this soup serves 4-6. Enjoy!

Recipe for Enhanced Italian Wedding Progresso Soup

Here's my recipe for the randomly enhanced soup I made. By randomly, I mean I pulled random ingredients from my house that I knew would all work well together and threw them into a pot to make something that tastes way better than soup from a can. This recipe works perfectly for those who are busy and want something quick and tasty, a broke college student, a young adult with lots of activities, etc.

Healthfully speaking, here's what I put in:

1/4 cup red beans
1 piece of bacon (minced) -- or 1/2 tsp bacon bits will work too
1/2 tsp freeze dried chives
2 small anchovy filets (that you'd find in the cans), cut into tiny pieces
1 clove of garlic, minced
1/2 tsp lemon juice
1/2 tsp lime juice
1/4 tsp garlic powder
1/4 tsp onion powder
1 tsp chili garlic sauce
1 tbsp shredded (or grated) parmesan cheese
2 big pieces of seaweed (nori sheets) - ripped into tiny pieces
salt/pepper to taste

Mix ingredients in while cooking the soup on the stove. Enjoy! It's actually really good!
