Healthy Veggie Lasagna Recipe

Veggies:
3/4 cup sliced mushrooms
3/4 cup chopped zucchini
1/2 cup sliced carrot
1/2 cup chopped red bell pepper
1/2 cup thinly sliced red (or white) onion
3/4 cup spinach
1 tbsp olive oil to cook the veggies
1/2 tsp garlic/herb seasoning
salt/pepper to taste

Place ingredients in a pan with garlic/herb seasoning, the salt and pepper, and olive oil and sauté vegetables for about 5 minutes or until ready (they will be a little softer than they're supposed to, but do not let them get mushy; spinach will also be wilted)

Sauce:
1 tbsp pesto sauce
3 cloves garlic
1 can tomato paste
2 cans tomato sauce
1/4 cup chopped yellow pepper
1/4 tsp oregano
1/4 tsp basil
1/4 tsp crushed red pepper
2 tbsp chopped white onions
salt/pepper to taste

Place ingredients in a blender and push "puree" until the sauce looks ready and isn't clumpy

Base:
7 lasagna noodles, cooked and cut in half
1 (15-ounce) carton cottage cheese
1/2 cup mozzarella cheese
1 tsp parmesan cheese (to sprinkle on top)

Preheat the oven to 375 degrees

Combine cottage cheese and sauce. Fill the bottom part of an 8 inch square baking pan (or dish) with noodles, put veggies on top, the sauce/cottage cheese mix, and then mozzarella cheese. Continue to add layers until you run out of ingredients, but make sure that there are noodles on the very top. Put a little bit of the sauce/cottage cheese mix on top and then sprinkle 10 shakes of parmesan cheese on top.

Place finished lasagna in the oven for 30minutes covered. Uncover and then bake for 20 more minutes. Let stand for at least 10 minutes. Times may vary slightly, so make sure to consistently check on your lasagna!

Accessories

This is a spoken word version of how it would feel to be used, as well as how people shouldn't be used and treated as objects. If that ever happens to you, you're better than that! Stand up for yourself and show whoever is mistreating you that you are worthy of better, don't deserve to be taken advantage of, and they are not worthy of being a part of your life. Enjoy!




Accessories…
When you think of an accessory, you generally associate it with being an object that you wear or random extra useful programs that you’d find on your computer…

Think again…

If you want to refer to a person as “being something”, you’d usually describe them as nice, kind, happy, pretty, shy, sweet, introverted, extroverted, whatever…
Accessories are supposed to be nice, just like how people are at least supposed to be…
They can be used, abused, worn out, and thrown away…
Or used until broken kind of like how you want to hold onto your car until it’s been driven into the ground and won’t even function anymore…

Now imagine a wallet…
Yes, it’s where people store their money, credit cards, and whatever else
You can get a fancy wallet or a cheap wallet, hold it in your purse or pocket, and run along with life as usual.

Just think about it for a second…

Take all these definitions of items you hold onto for daily use and apply that definition onto people…

People are used like a machine…
They work from sunrise to sunset for the pleasure of others to expect and receive little or nothing in return…
And when that does happen,
They don’t fully realize the extent of how poorly they’re being treated
Because the people on the using end look at the situation in terms of “how can I benefit from this person?”
You can’t just put a price tag on people and expect them to do all your nonsensical tasks for you and expect them to be fully productive after a certain point,
Because people have a limit of how much they’re willing to endure and once that line has been jumped over and stomped on a bunch of times, they end up saying “screw this” and just vanish…

People are used like a wallet…
If you take a highly successful individual and pair them off with a bunch of people who have nothing at all in their lives,
Those who have nothing will feed off their prey like a hungry shark who’s starving for its dinner, bite, and leave when there’s nothing left… and just suck all of your money away because they are miserable and have NOTHING for themselves and think it’s ok to be some kind of a leech to people…
And you give it to them because you want to do whatever you can to help the person get back on their feet, be happy, and share the same fun that you have with some hope of them at least being somewhat appreciative…
But meanwhile, it’s just an expense to you and costing you money
Just to have a friend who only sees you as a body and a wallet and nothing more…

Friends should be an ASSET… NOT an EXPENSE!

The lonesome warrior will either let it happen and sulk in the pain and misery or take a moment to realize that they are more worthy than being someone else’s dinner and vanish…

Because being used like an accessory hurts… it’s PAINFUL… it’s HORRIBLE… it’s an infliction of sheer hell, and treating the virtue of kindness as if someone just took a shit in your face…
So why do we even try to break people like how a three year-old rips the head off of a Barbie doll?
Because people are a bunch of selfish assholes who are only in it for themselves and don’t care about the implications of the situation on others…

Well, what do we do?

We need to unite and become stronger and find the right fish in the sea instead of letting ourselves take years and years of vicious pain and not do anything to change the situation in order to grow and better ourselves!
We need to break the cycle of improper use and realize that we aren’t a toy, machine, or wallet, we’re DEFINITELY NOT an accessory, and realize that we are BETTER than that!
We are STRONGER than that!
We are more POWERFUL than that!

What are you waiting for?
Stand up for yourself!
Speak out loud and have your voice heard!
It’s the only way to win the battle!

6 Ways to Thrive at an Internship or Career Fair

Meeting recruiters in person is being a step ahead of the other candidates who apply cold. You of course need to make sure to prepare an advance for the fair in terms of becoming knowledgeable about the companies you want to talk to, see which companies are attending the fair, and bring lots of patience with you because you know you're going to be waiting in plenty of lines. Make sure you prioritize your time in order to be able to talk to every company that you have on your list. That doesn't mean talk to every single company, but select a handful of companies that you may want to work for and go ahead and talk to them. If you have extra time at the end, feel free to talk to whoever else you want to as well. Don't talk to every single company for no good reason. You need to be somewhat picky in order to get a job you want, but only be selective until you are absolutely desperate to get a job (ex you're running out of time before the internship hiring period ends for all of the companies). Here are 6 steps on how you can thrive at an internship or career fair:

1. You should always treat an internship fair like an in-person interview, except it's usually a precursor to that. Dress to impress (business professional, meaning to wear a suit), give a firm handshake, and you're off with a smile and enthusiasm towards attaining the ultimate job for yourself!

2. Make sure you've done your research about each company that you plan on talking to because you may get asked questions to test whether or not you know anything about the company (ex where their headquarters are). Also, some companies make their applications available online prior to the fair. While you're doing your research, check if the company has their application available. If so, definitely apply prior to talking to them. It will impress the company with your level of interest in the job. Who knows, maybe they'll schedule an interview on the spot! It is possible for that to happen, so be prepared! I have seen it happen and it has happened to me as well!

3. Don't get discouraged if the company decides not to talk to you because your GPA doesn't meet their requirements or if they automatically tell you that you don't meet their qualifications. Still apply online if that happens. You never know. You can blow them away with your technical skills, portfolio, or other outside professional experience that they may have missed when initially glancing over your resume!

4. Be prepared with everything that you could possibly need on hand, such as extra resumes, business cards, pen/paper, a portfolio, and a bag to carry the random trinkets that you're given. Make sure to bring at least 2 resumes per company that you plan on talking to. Also, you should print your resumes on resume paper. Some career centers have some. Otherwise, you can find it at Wal-Mart or something like that. You never know. You may end up wanting to talk to more companies than expected. Bring a portfolio to store your resumes, pen/paper (in case you want to take notes while talking to the company, or right after), your business cards (which you should also bring), and a place to hold the free goodies you're going to get from all of the companies you talk to. They will give you little “knick knacks” such as flash drives, $5 gift cards to somewhere, hats, post it notes, etc. Recruiters will notice those "little things", such as using resume paper and bringing a portfolio and know that you have gone the extra mile in terms of handling yourself professionally! It also shows preparedness!

5. Bring your arsenal of questions. Even if you've talked to that particular company already at another fair, asking questions continues to tell the recruiter how interested you are in the position. Bring 2 or so questions each subsequent time you talk to them. If this is your first time talking to that particular company, bring at least 3.

6. The very most important thing to bring with you to internship fairs is your “30 second commercial”, which takes place right after the initial handshake usually (or right after the recruiter asks you your year, major, what type of internship or job you're looking to apply for, etc. and glances at your resume). When you give your 30 second commercial, you say that you're a (year) majoring in (major). Your goal is to work in your company for (whatever position(s) you plan on applying for). You are involved in (list extracurricular activities). I love to (list hobbies). You are a leader of (something, if you are). You love and are very passionate about what you do. Your greatest strengths are (ex being very flexible). Basically, just emphasizing what you love, your goals, and your strengths in order to best sell yourself. You want to brag, but don't blab. Don't put the recruiter to sleep. Imagine someone who just won't shut up and you are just nodding your head pretending to care. You don't want to end up being in their shoes having someone nonstop blab to you!

So here's how it goes:

When it's your turn to talk to the recruiter, introduce yourself, give a firm handshake, smile, and be ready to sell yourself while being yourself. Just before giving your thirty second handshake, tell the recruiter what position you want to apply for. Next, ask if they would like a copy of your resume (and a business card) and hand it over to them. Afterwards, start the conversation by giving your 30 second commercial or by answering whatever the recruiter asks you (ex the “are you eligible to work” questions and if you know anything about the company). After all of that, since there is a line, the recruiter will ask you if you have any questions; you are ready to ask away. With those questions, try to embark in a good conversation. Whether it's about the company or hobbies you share, try to connect with the recruiter you're taking to. When you're done, ask for a business card and how you can apply (if you haven't already). When you're done, shake their hand, thank the recruiter for their time, and you're off to conquer the rest of the fair!

Open Mic Nite Performance Of "Epic Progression to the Chinese Buffet"





That one moment when you call a venue (bar) ahead of time and they tell you it's a variety show and then you're the only poet... What do you do? Come prepared with both "Epic Chinese Buffet Adventures" AND "Progression" while deciding to mostly just improv it with both pieces on hand. I begin my trying to do standup (some rendition of "Epic Chinese Buffet Adventures") and eventually decide to transition into my poem, "Progression". Did I mention Sonic the Hedgehog and that I lost the game? Enjoy!

Resilience

Resilience...
While the willingness to let go is far easier than holding on for dear life,
Through all the pain and strife
You dig a million mile hole to look for at least one reason of why not to quit...
Even if you have to venture to an extraterrestrial arena just to find it,
The power you receive from proceeding onward is beyond your wildest dreams as long as you ultimately refuse to ever give up!
A dream will be born!
And you shall soar!

Jerkface Revised

As promised, here is the revised version of "Jerkface"! Enjoy!




The moment that you feel lost
When that jerkface tries to tear you apart
You feel like no one trusts you, no one loves you, you’re abandoned at the curb… left all alone to rot into pieces…

She randomly wanders into her own little world…
Endlessly sobbing…
As she silently screams the pain trapped between her teeth…

Seeking a new beginning and a place to truly call home, the internal self-reminiscing causes a tremendous depressive emotion as she envisions those who she once called “friends” dancing in their dazzling fun in front of her face as she’s stuck on the sidelines watching…
Excluded, she thinks of herself as a “lone and lost puppy”.
Thinking that there’s brightness somewhere on the other side,
She runs back to a place where she once resided
Only to be trampled upon and receive no signs of a warm welcome…

The one thing to tell yourself
Is that it’s not your fault for the rotten actions of others.
Don’t go blaming yourself for someone else’s issues…
There are a lot more people who will actually side with you than you think…
Karma will definitely be heading towards whoever wants to act like a genuine jerkface!

Jerkface

Welcome to your blast from the past... starring me! I'm going to show all of you people out there the tremendous difference in my writing from when I first started writing poetry back in 2006 up until now. This poem was written in June, 2006 and will be heavily revised by me tonight and reposted. This is actually one of the very first poems I wrote ever, and for some reason I always liked to include lost (yorkie) puppies in them. Here is the version from the past:



“Bark” *insert scream here* goes the poor little yorkie lost from her home
No one trusts her, no one loves her, she was pretty much abandoned
She randomly wanders around crying… silently

She goes to a place her owner used to take her and sees all of the other dogs having their little fun; she just stands there and watches
Since she cannot enter, she just thinks of herself as a “lost puppy”
She sees her owner nearby and runs up and scratches him
The previous owner totally abused her, a lot more than just a meaningless scratch

She isn’t the jerk, her owner is, but why doesn’t anyone see the owner as the bad guy?

And when her owner is alone in the world, she will know why!

Progression

This is what I think it means to make progress while being a successful young professional in their young twenties when they're learning how to thrive and tackle the world by storm. This is most definitely spoken word too. Enjoy!



Do you ever have that moment
Where you feel like you have endless amounts to say, but nowhere to expel the information?

What do you do with your internal information overloads when all you crave is an off button?

You either decide to mix everything into some magical melting pot that we humans refer to as a work of art,
Or you take everything that's been locked up inside for however long, put it in a bottle, cork it up, and hide it further away within our minds...

At some point, it feels like your brain is going to explode... and all you end up doing is talking and talking and talking and talking and it begins to speed up and now you're ranting and everyone wants you to just shut up and you can't stop talking because you have so much to say and you just wish someone would take a couple minutes and LISTEN to the words that need to be said to prevent a massive explosion from happening... Because all you've done lately is waste your time with shitty people instead of making something of yourself and finding REAL people who don't cost you money... And no, buying your friends doesn't mean joining a greek organization in college, but it means paying for people's destructive habits and enabling them to continue a lifestyle that is also detrimental to you and productive to no one...

Everyone seems to be in their own little world and selfishly care about themselves while there's a small percentage of individuals who truly want to make a difference...
Meanwhile, the media takes up much of our energy,
And it mainly provides negative or depressing stories that people don't always care to hear, such as “this person was shot in the south side of Chicago”, because we'd like to hear something POSITIVE for once...
Not necessarily someone saving a cat out of a tree,
But something along the lines of "this person raised a million dollars and donated it to support homeless people or war victims" or something like that...
Distractions consume more of our focus than we think,
And we're all either caught up in our past or are too wasted in our own heads to be able to exert energy for the greater good...

What if you want to make a difference but hit a roadblock?
Do you remain stagnant or do whatever you can to exit the loop and progress forward...
Sometimes, even when it's extremely difficult to remain positive, you just have to hold on tight with all your might and maybe even put up a fight...
Because nothing comes out of a closed mouth
And people can't read your mind either...

If you reach a point where you feel extreme discomfort then why don't you just stand up for yourself?
However, those who tell you that it "isn't that hard" are heavily mistaken...

Acting upon your thoughts within your mind is a lot easier said than done,
Especially if it requires you stepping out of your comfort zone and divulging information that's difficult to surrender to the public eye...

But you want to avoid being stagnant...
You want to create change in the world...
You want to make something of yourself...
You want to make a difference...
You crave progression and have the strongest desires to avoid the twisted loop that's quite difficult to rip yourself free from its tightly painful grip...
It's time to leave your past and troubles outside when you step into the ring...
That's what you're fighting for... justice and all the success that you crave!

Of course, you need to have a partner in crime by your side in order to accomplish your fullest potential...
Someone who brings out the best in you...
The one person who is the Batman to your Robin and even has the desire to share milkshakes with you!
You may think that you can proceed in life alone, but no, you really can't...
So quit being so darn stubborn!
You NEED someone... you NEED love... you NEED a friend... even if it's just ONE person, you still NEED someone!
Without a special someone who magically falls from the sky to provide guidance, or even just a best friend, you’ll end up craving that proper contact that you ACTUALLY NEED!

It stinks when you feel like you have to be your own best friend just to protect yourself from a spiraling downfall,
And even have to migrate to the place of absolute last resort to avoid falling into a giant trap of being used and abused...

But no matter what the situation is,
No matter how absolutely crappy it is,
And regardless of how many things you're unhappy with at the current point in time,
You HAVE to keep going,
Because there ALWAYS is at least SOMETHING positive that's happening in the meantime!
And the main thing that's definitely certain is that goodbye isn't the answer,
Quitting definitely isn't the answer,
And vanishing is an even worse idea...

You need to create your own journey of success!
With dreams spanning even farther than the clouds
That may even be too big for the average person to swallow,
Just follow them... just go... right now…!
Don't let ANYTHING or ANYONE stop you from achieving the ultimate destiny that you crave!
Life is yours!
Go run proudly and dive head first into it!
You definitely deserve it!

Maron's Tasty Salsa Recipe

Put the following ingredients into a giant mixing bowl. Makes enough for a party! Reduce the recipe and/or omit ingredients as needed because I made it very open ended. This is how I made it though. Enjoy!


6 Roma tomatoes, chopped
4 garlic cloves, minced
2 seeded and minced jalapenos, plus 2 roasted, skinned and chopped jalapenos (or just 4 seeded and minced jalepenos, your choice)
1 red bell pepper, fine dice
1 green bell pepper, fine dice
1/4 red onion, fine chopped
1/4 white onion, fine chopped
1/2 cup corn
1/2 cup black beans
2 dry ancho chiles, seeded, cut into short strips and snipped into pieces (optional)
1/4 cup bloody mary mix (optional)
1 tablespoon olive oil
1 lime, juiced (10 squirts of lime juice works too)
5 squirts lemon juice
5 tbsp cilantro
Chili powder, tabasco sauce, red pepper flakes, salt, and pepper, to taste
Fresh scallions, freeze dried chives, or parsley, to taste (optional)



Hamburger Cous Cous Salad Recipe

I was bored and wanted to concoct something with a hamburger and this is what I came up with:

1/2 of a grilled hamburger
1/2 avocado
1/2 cup (plain) cous cous
1/4 cup beef broth
1 mini orange pepper
3 handfuls spinach
5 shakes minced onion
5 shakes garlic powder
10 shakes worstchestire sauce
10 squirts lime

If you want to, I usually add chicken or beef broth into the cous cous instead of cooking it with water. Also, I like to mix about 3 handfuls of spinach, 1tbsp of garlic, and 10 shakes onion powder when I'm initially cooking the cous cous, but I just grabbed the plain cous cous from the fridge. Enjoy!

Rear View Mirror

Just stop looking in the past and start looking in the now! That's what you to to produce a gleaming vibe! That's the gist of this spoken word poem in a nutshell. Enjoy!



The end of the road is a lot closer than you think it is…
Or is it…?

Tunnels are dark enough to require a fire when you’re in dire need to break free
Or else they will consume the brightness from the sky
But where are you going?
You need to figure that out don’t you…
It sure isn’t on the path that everyone told you to run along…
Nope… it definitely is not!

If the path isn’t “that” way, then where is it?

You’re stuffed with a stomach full of questions
And famished for knowledge and answers…
With that, you proceed in your desperate search for the buried treasure with the only thing in your back pocket being all of the resilience you possess…

Eventually, you tumble and fall into a wall while feeling not so tall...

You wake up to look around
Only to see a glimpse of your past standing in your rear view mirror
While the Now is holding up a neon sign that’s begging you to come a little closer…
But you keep looking back… as far back as your vision permits you to see until you eventually decide to snap out of the negative trance when all you’re doing is telling yourself how rotten of a person you are…

But you’re NOT!

At some point, the red-blooded fear makes a valiant attempt to intercept your heart from your side mirrors while you fight to the death to not fall victim to the norm…
The norm is those who can’t see outside their walls and those who fail to successfully continue fighting and you end up stuck in a vicious loop and struggle to climb out…
Because all you’re doing is continuing to look in your rear view mirror…

Feeling trapped is like being stuck in sinking quicksand while barefoot…
You're forced pool your resources together in a desperate attempt to promptly solve the puzzle and win the game
As you end up sitting upon the solution that's consumed by a stream of self doubt within a puddle of mud...

If you keep telling yourself how much you're not capable of, you'll end up sinking... lower and lower until a mysterious voice from above shows you the meaning of mystery and motivation that keep you climbing towards the top!
Otherwise, madness and despair will swallow you whole!

Just quit looking behind you and start making some forward progress!
Because your rear view mirror is definitely not in the gold-filled treasure chest!

Dear Greasy Goodness

Bacon is seriously the most amazing thing ever! It really is! I ended up writing about bacon due to entering a poetry contest, and this is the awesomeness I came up with. Enjoy!



Dear greasy goodness,
Thank you for always being there for me
With your succulent strips of pig-flavored perfection
That can participate in all sorts of edible indulgences.
Your flawless curves are well-suited for anything ranging from an ice cream party for one
To a bacon burger bonanza fit for a king!

You help me triumph through those chilly nights of darkness and despair,
Those tough days at work when going home is the first thing on my mind,
And you even uplift me when I’m feeling above the clouds…
For that, you will always be thanked for your positive vibes and free spirit!

You dance in the frying pan like a dazzling fireworks display
As you sizzle and sweat your sweet aroma into the atmosphere.
You flood my taste buds with a sensational experience of rich, hearty deliciousness
That makes my mouth thirst for more!

You have tackled our culture by storm,
Turning us into a bacon-crazed nation!
You have become a world renowned sensation of feeding our guilty pleasures

Turbulence

Growing up is never easy, but requires you to put your all into life in order to ensure your success. This is how I feel (in spoken word poetic form) about what growing up really is and what it really means, especially because I am going through it right now. It's all about the coming of age. Enjoy!

Hey!
Get your ass up!
Snap to reality!
What were you thinking
Just going out there exploring aimlessly without an end goal in mind...
You could get into some serious trouble
Unless you know how to handle yourself...

So how did you end up there in the first place..?

The scatterbrained fiend
Started climbing up the ladder
With no idea what they were doing at all...
They were just impulsively making decisions without stopping to take a second and think...
You need a moment to think about what the decision really means
And what it really does,
Along with the impact it is going to make on yourself and others...
Don't you want to take a risk?
You can't if you say no all the time,
But if you say yes to everything like the man in the movie,
You'll end up feeling the weight of the world on your shoulders while frozen in a state of being overwhelmed...
You definitely don't want to hit that point that's for darn sure...

There's sometimes a point where you can't help it and everything comes at you all at once like the strong winds that cause turbulence on a plane...
These gusts of wind feel so strong... almost too strong to bear... I can't do it... I cant do it... I can't do this anymore this is too strong to withstand I just wanna give up... Please God help me I'm going to have a breakdown please help... Please help!

Wait a minute...

Giving up, eh?
You're better than that!
Because quitting will either put you in a loop, put you in a hole, or put you in a grave...
Because it's all about the coming of age!
So what you screw up,
Make a foolish decision... or twelve,
Or lose a bunch of your friends while consistently meeting the wrong people even more...
Until of course you wake up and realize what the heck you're doing,
Snap out of the craze,
And decide to move forward...

Progression is a decision, not a court-ordered mandate...
If you want to change the world you have to be starving for growth and for consuming the stars...
You have to crave it like how Freddie Mercury drinks the spotlight when he performs...
And of course you have to embrace it!

You can't deny, erase, or reject the coming of age...
It's like turbulence
It may be extremely shaky, unsteady, and quite unruly,
But you won't die and head towards your pending doom...
Just step outside of the little box referred to as your own little hidden world!
It's the only way to be able to own the stars
And emerge with gold encasing your world!

It's poetry contest/publishing entering season for me and some of my poems were either old or I just wanted to perfect them prior to entering them in something. With that, the following poems have been heavily (or mildly) revised in some way:
